The food additives that inhibit the growth of the pathogen Clostridium botulinum are nitrites. Nitrites are regarded as effective growth inhibitors for Clostridium botulinum and thereby they prevent botulism. By inhibiting its growth nitrite disable production of the lethal toxin, so it often added to a food such as canned meat.
