Mercury shows faster increase in temperature than water on heating because the mercury has less specific heat capacity than water.

The specific heat capacity is defined as the amount of heat to required by a mass of a material to make a unit change in its temperature.  Mercury has less specific heat capacity and shows immediate changes in the temperature. Because of this mercury is used in thermometers and not water.
